Roni's therapy through the Breast Cancer Journey= SOURDOUGH Baking

This new journey for me has been mind boggling  from advocating for myself with the medical πŸš‘ community to pulling collars and letting them know, I'm not just a number! I am a child of the MOST HIGH!  
Then Ms. COVID-19 had to turn the world 🌎 upside down , and things land all over the place except the common sense dust dispersed. 
 So I try and extend kindness while exercising  patience, but this journey here has stretched me farther pizza πŸ•  dough! Thank GOD my next oncology appointment is Monday at 4:20 p.m. πŸ€”πŸ€«πŸ€­ That has to be a smoking 🚬 🀣 πŸ˜‚ time of day! πŸ€πŸ’… Maybe I should puff puff pass πŸ€” 


So what do I do to get through?πŸ€”
I find recipes to make for my family and friends that I can insert my Sourdough starter discardπŸ˜‹πŸ˜›.
Today's  creation started last night πŸŒ™ when I made the Sourdough sponge 🧽 πŸ˜‹ (Sourdough starter, milk and flour) to rest overnight on the counter. 

This morning πŸŒ„ I emptied it into my bread and dough maker to be combined with the remaining simple ingredients , flour, baking soda, salt, and sugar.
It was completed on the dough setting in a couple of minutes and resembled my sticky bread dough.
Then it was time to roll her out with my floured rolling pin and surface.
The fun part that took me back to my childhood of baking from my moms red checkered "Betty Crocker Cookbook".  Back then, I tried my hand at biscuits that came out the oven as golden πŸ’€ BRICKS!  If you didn't  know, I grew up in South Central Los Angeles.  I could have maybe used them for self defense πŸ€” πŸ˜• πŸ˜ͺ πŸ˜… πŸ™ƒ?

I had fun this morning using a drinking glass to cut ✂️ my muffins.
To be dusted with cornmeal was a sign I was more than halfway to some Sourdough goodness.
Then, I had to bust out the old Cast iron skillets 🍳 passed down to me from my mother to get this party πŸ₯³ rocking 😎. 
Yeah baby, we cooking 🍳 with grease now, or should  I say Organic Coconut πŸ₯₯ Oil πŸ›’?
The rest was honing the craft of getting to the correct temperature 🌑 so the English muffins would not burn.
I tried a plate 🍽 to flatten and keep even temperature, but it wasn't heavy enough. 
So I remember reading πŸ“š somewhere that another cast iron skillet 🍳 would do the trick of flattening and even temperature 🌑 πŸ™„ πŸ˜‰ πŸ˜„ πŸ˜‘ 😏. 
The rest was all a slam dunk!
She said, " Mom, you need to make more today because I'm going to eat them all."
